Garlic Parmesan Roasted Butternut Squash
Butternut squash is the perfect fall winter food and can be made a million different ways, soups, roasted, air fryer, and crispy fries. This recipe is my favorite way to make butternut squash with just 5 ingredients and 1 bowl you can quickly whip up in 10 minutes and toss in the oven.
Ingredients-
1 butternut squash (medium size 2-3 lbs)
2 tbsp of salted butter or extra virgin olive oil
1 teaspoon of salt and a pinch extra for topping
1 teaspoon of black pepper
1 tbsp of garlic powder or 3 cloves of fresh garlic minced
Toppings-
3/4 cup of Parmesan cheese
Instructions-
Preheat oven to 400, line a baking pan with parchment paper
Cut squash in half and scoop out insides, then slice vertically into half inch slices
Mix all ingredients in bowl except cheese until squash is well coated
Bake for 20 minutes
Flip squash, cover squash in cheese and bake for a further 10 minutes
